Pumpkin spice muffins
Bake a batch to serve a crowd or to save for a quick breakfast or snack.
Ingredients2 cups whole wheat flour
2 teaspoons baking powder
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon baking soda
2 eggs, beaten
1 cup canned pumpkin
1/4 cup sugar
2 cups unsweetened applesauce
2 tablespoons canola oil
1 teaspoon almond extract
Directions
- Preheat oven to 350 degrees Fahrenheit.
- Mix together the flour, baking soda, cinnamon, nutmeg and baking powder in a medium bowl.
- Combine remaining ingredients in a large bowl.
- Slowly add the dry ingredients to the large bowl until just blended. Do not over beat.
- Pour the batter into 18 non-stick muffin cups and bake for 25 to 30 minutes.
- Remove muffins from the oven and let cool slightly.
- Remove the muffins from the pan and let cool completely.
