Potatoes lyonnaise

Whip up a great-tasting, healthful side dish in 20 to 25 minutes.

Ingredients

3 potatoes, cut into 1-inch pieces
2 onions, chopped
2 tablespoons margarine
2 cloves garlic, minced
1/4 teaspoon salt
1/8 teaspoon pepper
1/8 teaspoon paprika

 

Directions

  1. Combine all ingredients in a 3-quart, microwave-safe casserole dish.
  2. Cover loosely with plastic wrap, cook on high in microwave for 15-20 minutes or until potatoes and onions are tender, stirring several times.
  3. Let stand for 5 minutes
